Chromecast adapts, but 400ms is the default, and most common value even on good networks. Latency in conversations gets annoying around 200ms. The Chromecast mirroring protocol typically has delay of around 400ms (about half a second) for mirrored audio and video on top of whatever delay Skype has in their call. That all said, I don't think mirroring Skype is going to be as satisfying as you'd hoped. Skype deals with audio in some unique ways you may need to manually select the audio input (your microphone) and audio output (the AirParrot output device).
We're also able to offer 1080p quality, and in my experience higher frame-rates (less choppy). AirParrot 2 ( ) (disclosure: I work at Squirrels who make AirParrot2) offers the ability to both mirror the desktop and system audio (the Chrome method can only share audio from web pages, not Skype or iTunes).
